Spinach and Black Bean Burritos

1 tbs olive oil
1 onion diced
3 cloves garlic diced
12 oz spinach fresh or frozen ( if frozen thaw and drain first)
1 can diced tomatoes drained or 2 fresh tomatoes diced
2 cups black beans drained -canned or cooked
1/2 tsp chili powder
1/2 tsp cumin
1 tsp salt
1 tsp lemon juice
tortillas
8 oz shredded cheese of choice-cheddar, queso, monterey jack
jar of favorite salsa
Heat a large skillet with the olive oil on medium high. Add onion and saute for about 3 minutes. Add garlic and cook for about 1 minute. Add the spinach, tomatoes, black beans ,and spices, and lemon juice. Cook over medium heat for about 10-15 minutes. Get out a baking dish and lightly cover the bottom with salsa. Take a tortilla and spoon some of the mix into it. Then add some cheese. Roll up and place in baking dish. Continue making the burritos till you run out of tortillas or mix. I usually get about 6-8. Now cover with salsa and sprinkle with cheese. Heat in oven at 350 degrees for about 30 minutes.
