Spinach Bread

Don't let the name fool you. This spinach bread is 'out of this world' yummy. All my kids like it. Maybe yours will, too. This bread makes a great side dish, lunch, or snack.

1 loaf french bread, wheat or white
1 stick butter
12 oz. package frozen chopped spinach
1 medium onion, chopped
6 oz. mozzarella cheese, shredded
6 oz. cheddar cheese, shredded
4 oz. can sliced mushrooms, drained
cayenne pepper
4 oz. can sliced mushrooms, drained
Pre-heat oven to 350 degrees. Slice bread in half lengthwise. Cook onion in butter until translucent. Microwave spinach 4 minute. Drain well, blotting with paper towel, if necessary. Add spinach to onion/butter mixture. Stir in cheeses and mushrooms Still until cheese is melted and everything is mixed. Spread mixture evenly on both sides of bread. Sprinkle lightly with cayenne pepper. Place on foil lined baking sheet. Tent foil loosely over bread. Bake 30 minutes. Cut into slices and enjoy.
