The perfect feature for your Sunday brunch. This quiche is proportioned just right with mild swiss cheese, crisp savory bacon and fresh baby spinach.

1 9 inch deep pastry shell (homemade or store bought)
6 strips bacon, crisply cooked, drained and crumbled
1 cup shredded mild swiss cheese
3 eggs
1 1/2 cups half-and-half
1 handful fresh baby spinach, chopped

Bake shell in preheated 450 degree oven for 8-10 minutes. Reduce heat to 350 degrees. In a bowl, beat eggs with half and half, then stir in cheese, bacon and spinach. Pour mixture over pastry shell. Bake 35-40 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
