Yet another tasty Tuesday Salad!! Tender pork sits atop baby spinach, goat cheese, and honey roasted pecans. All tossed with a sweet yet tangy pomegranate poppyseed dressing.

1/2 cup mayonnaise, low fat
1/8 cup tarragon vinegar
1/8 cup pomegranate juice
2 tablespoons poppy seeds
1/8 cup honey
2 tablespoons sugar
5 cups baby spinach
3 cups mushrooms, sliced
2/3 cup red onion, thinly sliced
2 cups grape tomatoes, halved
salt and pepper to taste
1 pound boneless pork chops
4 ounces goat cheese, crumbled
1/2 cup honey roasted pecans
