Spinach & Two Cheese Stuffed Shells with Cauliflower Alfredo Sauce

Alfredo sauce made with cauliflower and no heavy cream. So good you won't even miss the cream.

15 Jumbo Pasta Shells (cooked according to package directions)
1 1/2 cup frozen chopped spinach (thawed with liquid squeezed out)
8oz part skim ricotta cheese
5oz smoked gouda cheese (crumbled)
1 teaspoon garlic powder
salt and pepper to taste
8oz frozen cauliflower florets
4 cups low sodium chicken broth
2 tablespoons butter
3 cloves garlic (crushed)
1/2 cup grated parmesan cheese
3/4 cups milk

Optional
shredded parmesan cheese (for topping)
