Squash Bake

Crispy baked yellow squash- a family favorite!

4 cups yellow squash, cleaned, boiled, and smashed

1/4 cup onion, finely chopped

1 egg, beaten

1 teaspoon sugar

1/2 cup Ritz cracker crumbs

1/2 cup cheddar cheese, shredded

salt and pepper to taste
Lightly grease a 1 quart casserole dish. Combine all ingredients, but crackers and place in dish. Sprinkle crushed crackers on top. Bake uncovered at 350 degrees for 25-30 minutes.
