The best way I know to use up an abundance of summer squash . In fact, these are so good, they're worth buying squash at the store for.

3 cups grated summer squash
1 medium onion, diced, sauteed until transparent
2 tsp salt
1 tsp thyme
black pepper to taste
1 1/2 - 2 cups flour, depending on how sticky you want them.
1/2 cup yogurt
1 egg
1 medium onion, diced, sauteed until transparent

Cut the onion and get it sauteing while you grate the squash. Combine all ingredients in large bowl. Drop by spoonfuls into hot pan. Fry like pancakes.
