These cute shamrock cookies are perfect for St. Patrick's Day. And the dough can be made up to two weeks ahead!

3/4 cup butter
2/3 cup sugar
1/4 tsp salt
1 egg
1/2 tsp mint or almond extract
Green food coloring (a few drops)
2 cups flour
Green colored sugar

Beat butter, sugar, salt, egg, extract, and green food coloring till fluffy. (I added a bit too much food coloring this time. I like it when the dough is a little lighter and the colored sugar stands out...
