STICKY TOFFEE PUDDING POKE CAKE is the ultimate holiday dessert! Top with whipped cream or ice cream for an extra special treat!

For the Toffee Pudding (Cake):
• Large saucepan of boiling water.
• 1¼ cups whole dates, pitted & cut crosswise into ¼ inch slices (divided)
• 1¼ cups all-purpose flour, unbleached
• ¾ cup warm water
• ½ teaspoon baking soda
• ½ teaspoon baking powder
• ½ teaspoon salt
• ¾ cup dark brown sugar, packed
• 2 large eggs
• 1½ teaspoons vanilla extract
• 4 tablespoons (1/2 stick) butter, unsalted, melted
For the Toffee Sauce:
• 8 tablespoons (1 stick) butter, unsalted
• 1 cup dark brown sugar, packed
• 2/3 cup heavy cream
• 1 tablespoon rum
• ½ teaspoon fresh lemon juice
• Serve with Ice Cream and drizzle with Toffee Sauce
