Strawberries and Cream Swiss Roll

Deliciously moist and fluffy vanilla cake filled with a layer of fresh strawberry sauce, and a layer of homemade whipped cream. The perfect summer dessert!

For the Strawberry Sauce
1 cup (200g) fresh strawberries, sliced
2 tablespoons water
1/2 cup (100g) caster/granulated sugar
2 tablespoons cornflour/cornstarch
For the Cake
4 large eggs, separated, room temperature
3/4 cup (150g) caster/granulated sugar
2 teaspoons vanilla extract
1/4 cup (60ml) greek style yogurt
1 cup (100g) cake flour*
1 teaspoon baking powder
1/4 teaspoon salt
For the Filling
1 and 1/4 cups (300ml) heavy cream
1/2 cup (60g) icing/powdered sugar
1 teaspoon vanilla extract
