Strawberry Lemon Popsicles

Summer is already in full-swing around here. It started for us with Memorial Day weekend & a lovely trip up to my hometown, Duluth, MN. We went for a wedding, but it ended up being a surprisingly peaceful getaway which included lots of downtime by the lake throwing in rocks & searching for beach glass, a few hours of HGTV, & of course all kinds of scrumptious meals (like Vintage Italian Pizza, Northern Waters Smokehaus, Amazing Grace Bakery, & The Duluth Grill). 1 cup Greek yogurt
Zest of one lemon
*1 cup strawberries hulled & minced
popsicle molds
*If your strawberries aren't very sweet, you may want to experiment with a bit of honey or something, but since June is the season for strawberries, you should be good.
Combine the yogurt, zest & strawberries in a bowl. Fill the popsicle molds with the yogurt mixture & freeze for at least 6 hours before enjoying. In order to get the popsicles out of the mold, run hot...
