Strawberry Shortcake with Individual Pound Cakes

Wonderful version of classic summertime strawberry shortcake.

Pound Cake Strawberry Shortcake

for the pound cake:
2 cups whole wheat flour
1 cup 2% milk or whatever you have
1 cup sugar
1/2 cup butter
1 egg
Juice of 1/2 an orange
1 tsp salt
1 tbs baking powder

1 lb Strawberries
1 cup sugar, or much much less depending on sweetness of berries

1 pint whipping cream
1/4th box of vanilla pudding mix (or leave it out and add 1 tsp sugar and 1 tsp vanilla)
Pre-heat oven to 350, grease two muffin pans with butter or your preferred form of fat. So this is how my hubby made these, be mixed all the wet ingredients, eggs, milk, oj. then he mixed the dry ingredients in a separate bowl, then cut in the butter like making biscuits. Next, mix both bowls together. Spoon the batter into the muffin tins, filling them less than half. This creates a small cake rather than a puffy topped muffin. Bake for 20-30 minutes! Wash cut and sprinkle sugar on your strawberries for the shortcake. I used two quarts for our friend's BBQ from Safeway, and they were not so sweet, so I added 1 cup sugar. On Saturday, we used strawberries from our friends' organic farm, they were small and super sweet, so even though I used the same amount of berries, I only used about three tablespoons of sugar on them. Leave the bowl of berries out at room temp for a bit to get the juices flowing, then refrigerate until you are ready to build some shortcakes! Next, whip some cream! If you are making this ahead of time for a pot luck or BBQ a great trick is to whip the cream with 1/4th of a box of vanilla instant pudding mix. We used Jello brand on Friday and it worked great. On Saturday we used nothing but a bit of sugar and vanilla, it was great. There is something wonderful about simple, fresh whipped cream. Both nights my husband whipped the cream by hand, it's a pretty fun pre-eat activity and you can always pass the bowl and whisk to the next hungry guest when you get tired. Finally build some shortcakes! Yum. grab a bowl, plate or what have you and build yourself a dessert with one or two individual pound cakes, a big serving of berries and their juices, and a dollop or two of whipped cream.
