Strawberry & White Chocolate Ice Cream Sandwiches

Smooth and creamy strawberry & white chocolate ice cream + buttery orange-pecan shortbread cookies = kick-ass ice cream sandwiches!

For the Orange-Pecan Shortbread Cookies (Makes 24)

250g unsalted butter, at room temperature
½ cup maple syrup
100g rice flour
100g pecans
200g plain flour
2 tbsp orange zest
½ tsp cinnamon
¼ tsp nutmeg

For the Strawberry and White Chocolate Ice Cream

300g strawberries (you can use fresh or frozen)
200g sugar
200ml thicken cream
250g sour cream
150g white chocolate chips
