Stuffed Cherry Tomatoes

A wonderful little snack that tends to be consumed quickly and in volume.

6 ounces of smoked salmon, cooked and shredded
3 heaping tablespoons of mayonnaise
2 tablespoons of onion diced fine
1 tablespoon celery diced very fine
1/4 teaspoon each of rosemary, thyme, parsley, salt and black pepper
1 pound of cherry tomatoes
In a bowl mix all of the ingredients thoroughly except for the tomatoes and cover with plastic wrap and refrigerate for at least 90 minutes to allow the flavors to blend. When sufficient time has passed cut the tops of the tomatoes off and hollow out the centers. Fill the tomatoes with your salmon mixture and refrigerate for another 30 minutes before serving with a small bowl of lemon or lime juice on the side to be spooned on the tomatoes as a garnish.
