Stuffed Crepes with Berry Sauce

Crepes stuffed with sweet cream cheese and topped with fresh mixed berry sauce make a sophisticated ending to any meal.

1 cup all-purpose flour
3 eggs
2 cups milk
1/4 tsp salt
2 Tbs butter, melted

For the filling
1 (8oz) package cream cheese, softened
1 cup whipped cream
1/3 cup white sugar

For the sauce
2 cups fresh blueberries
2 1/2 cups fresh strawberries, sliced
1 cup white sugar
1/2 tsp vanilla extract
1/2 Tbs lemon juice
1/4 cup water
In a large bowl, combine the eggs, butter, salt, and milk; whisk until thoroughly combined. Add the flour and mix until the batter is smooth. Heat a medium sized skillet over medium heat and spray with non-stick spray. Pour 1/4 cup of batter into the hot pan, tilt the pan to evenly coat the bottom with batter. Cook the crepe for 1 to 2 minutes on each side, or until golden brown. Remove from pan and set aside.
