Summer Veggie Casserole

Remember my friend who sits next to me at work? Well, he LOVES to give me ideas for my blog. So, this recipe today I have to thank him for. He said his mom made something just like it, and that it was really yummy, and that I should try it out. Right when he told me about it, I knew I would love it, but I wasn’t so sure about my husband. 3 small (or 2 medium) zucchini squash
3 tomatoes
1 orange bell pepper
1 red onion
2 Tbs. Dry ranch dressing mix
1 tsp. garlic powder
to taste Salt and Pepper
2 cups bisquick mix
2 eggs
3/4 cup milk
to taste Parmesan cheese
