Super Easy Pumpkin chocolate chip cookies

I LOVE pumpkin chocolate chip cookies, but have never made them before so I decided to try last night and they were delicious and super easy. I heard you could make them with a cake mix and so I tried, super easy and they were a hit! I only had a carrot cake mix and 1 large can of pumpkin, so I added in some pancake mix to thicken, it turned out yummy! The kids loved it even with the carrots :)

18 oz carrot cake cake mix
29 oz can of pumpkin
1/2 cup pancake mix (If you use a 16 oz can of pumpkin you can omit the pancake mix)
1 12 oz bag of semi-sweet chocolate chips
Mix together the cake mix, pumpkin, and pancake mix. Once they are mixed together add in the chocolate chips. The cookie mix will be sticky, a little thicker than a cake mix. Drop about 1 Tbsp onto a cookie...

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
