Sweet and Savory Bacon Wrapped Pork Chops

Honey mustard and bacon wrapped roasted pork chops.

* 4 Center Cut Boneless Loin Pork Chops 1 - 1 1/2 inch thick
* 4 slices thick cut bacon
* 3 tbsp Dijon mustard, like Grey Poupon
* 2 tbsp honey
* 1 clove garlic, minced
* 1 tsp minced rosemary
* Fresh cracked black pepper
Combine the mustard, honey, garlic and rosemary in a small bowl. Set aside. In a shallow dish, arrange the Pork chops in a single layer and coat with mustard mixture on all sides. Cover, and refrigerate for 2-4 hours. 1 hour before you are ready to cook, remove chops from refrigerator to bring to room temperature. Keep covered. Preheat oven to 350° Line baking sheet with foil. Lay out the 4 pieces of bacon evenly on sheet and place one mustard coated pork chop in the center of each slice of bacon. Wrap ends around chop and sprinkle pepper on top. Bake for 20-30 mins. Checking internal temp for doneness. Aim for 140°-150°. Broil for about 5 minutes to crisp bacon. Remove from oven and allow to rest covered for 5-10 minutes.
