Sweet Corn Bread

If you double the recipe it will make enough for 72 mini muffins. They will cook perfectly at the same temp for 10 min (based on a mini muffin tin with 24 muffins) don't forget to spray the muffin tin too

1 cup flour
1 cup yellow cornmeal
2/3 cup sugar
1 tsp salt
3 1/2 tsp baking powder
1 egg
1 cup milk
1/3 cupvegetable oil

-Preheat oven to 400(F) -Spray 8x8 pan with Pam or other cooking spray -Mix all ingredients until combined -Pour in prepared pan -Bake for 25 minutes
