If you double the recipe it will make enough for 72 mini muffins. They will cook perfectly at the same temp for 10 min (based on a mini muffin tin with 24 muffins) *don't forget to spray the muffin tin too*

-Preheat oven to 400(F)
-Spray 8x8 pan with Pam or other cooking spray
-Mix all ingredients until combined
