Sweet Curry Roasted Pork

A deliciously sweet and spicy curry recipe that you make in the crock pot!

1.5lb boneless pork shoulder
1 cup chicken broth
2 tablespoons curry powder
1 tablespoon ground cumin
1 clove garlic, minced
1lb baby carrots
3 medium sized sweet potatoes, cubed
Set crock pot to cook on low Add broth to crock pot Add minced garlic In a small bowl, mix together curry powder and cumin Rub mixture on pork shoulder Add pork to crock pot Let cook for 3 hrs Then add carrots and sweet potatoes And let cook for an additional 2-3hrs or until pork is cooked through and veggies are tender
