Sweet Polynesian Meatballs

The meatballs are then topped with a sweet, sticky sauce (made of surprise ingredients – grape jelly?! Who would have thought?!) and baked until they are cooked all the way through. We put our meatballs on top of quinoa, but you could put them over rice or even poke a toothpick in them and serve as an appetizer!

1 tablespoon olive oil
1 small onion, minced
2 cloves garlic, minced
pinch of crushed red pepper
1½ lb. ground beef
? cup bread crumbs

2 eggs, beaten
½ teaspoon dried parsley

A Spanish omelette is also known as tortilla de patatas in Spain where it is a tapa and it consists of just four ingredients plus seasoning. It is a Spanish classic dish for very good reasons. It is simple to make, it is nutritious and absolutely delicious. Oh, Spanish tapas!! Aren't these simply the best?
