1 tablespoon butter
3/4 teaspoon salt
dash nutmeg
1 pound sweet potatoes or yams
1/2 cup parmesan
3/4 cup cream
3/4 teaspoon pepper
1 pound russet potatoes
1/3 cup chives
3/4 teaspoon salt
dash nutmeg

Spray a 9 x 13 pan with cooking spray.
Combine butter, cream, salt, nutmeg, pepper, and Parmesan in bowl, set aside.
Slice potatoes thinly and place in ice water to keep from browning.
