Sweet potato pie on a ginger snap crust, smothered in caramel sauce, and topped with a sweet fluffy meringue.

For the caramel sauce:
1 cup brown sugar
6 Tbs unsalted butter
1/3 cup evaporated milk
1 tsp vanilla extract
For the crust:
2 cups ginger snap crumbs
1/3 cup unsalted butter, melted
For the filling:
3/4 cup granulated sugar
1/2 cup cornstarch
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground ginger
2 cups roasted sweet potato puree
3/4 cup evaporated milk
4 large egg yolks
3 Tbs butter
For the meringue:
3 egg whites
1/4 tsp cream of tarter
1/3 cup granulated sugar
