This Sweet Potato Pecan Bread was inspired by the autumn favorite, candied sweet potatoes. It is a moist, fragrant , and delicious served warm.

1 medium sized (8oz/225g) sweet potato
1½ cups (225g) all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp ground cloves
1/2 cup (110g) sugar
1 large egg
1/4 cup (60ml) vegetable oil
3/4 cup (180ml) buttermilk
1/2 cup (50g) chopped pecans
