Sweet Potato Skins Stuffed with Thai Quinoa

Super healthy and easy recipe.

4 sweet potatoes
Olive oil
1 cup of quinoa
1 carrot, shredded
1 bell pepper, chopped
For the dressing:
2 tablespoons of ginger, chopped
2 spring onions, chopped
1 red onion, chopped
3 tablespoons of salted peanuts, chopped
Juice of 1 lime
1 bird’s eye chili, chopped
1 tablespoon of sesame oil
1 teaspoon of fish sauce
2 tablespoons of agave syrup
2 tablespoons of soy sauce
1 tablespoon of white vinegar
1 tablespoon of apple cider vinegar
1 lemongrass (tough outer leaves removed), chopped

Scrub under cold water each sweet potato to get rid of any dirt. Place them on a baking tray lined with aluminum foil. Roast them in the oven at 180C/350F until tender. This will take about 1 hour.
