Sweet & Salty Roasted Pumpkin Seeds

This is an awesome snack and an awesome way to use up all of those pumpkin seeds.

1 1/2 cups pumpkin seeds, rinsed and cleaned
1 tbsp. olive oil
1/4 cup cinnamon sugar mix
2 tsp coarse sea salt
Preheat oven to 400. Line a baking sheet with foil. Spread pumpkin seeds over the foil. Sprinkle the olive oil over the seeds, then sprinkle with cinnamon and sugar mixture and salt. Gently stir to coat all the seeds. Bake for10 minutes, then stir. Bake another 8 minutes or just until sugar is caramelized. Remove seeds from oven, sprinkle with a little more salt and let cool. Break into smaller pieces and enjoy!
