Sweet & White Potato Pancakes

Sweet and white potatoes combine for a delicious potato pancake topped with Greek yogurt and smoked salmon

4 cups peeled, shredded baking potato or frozen hash browns
4 cups peeled, shredded sweet potatoes
3 large eggs, lightly beaten
5 tbsp. whole wheat flour
2 tsp. kosher salt
1/2 tsp. fresh ground black pepper
Pinch fresh ground nutmeg
About 1 tbsp. unsalted butter
2/3 cup non-fat Greek Yogurt
2 to 3 ounces smoked salmon

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
