T-Bone Steaks with Port Thyme Mushrooms and Parmesan Roasted Potatoes

Juicy steaks are topped with port wine and thyme mushrooms and served with crispy Parmesan roasted potatoes.

3 cups mushrooms, sliced
1 tablespoons margarine
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh thyme, chopped
3/4 cup port wine
2 pounds baby potatoes
1/2 cup parmesan cheese
1 pound t-bone steak
1 tablespoon margarine
2 tablespoons extra-virgin olive oil
Heat a large skillet over medium-high heat. Add margarine and oil. Swirl to coat. Add mushrooms and thyme. Saute until brown. Add port and deglaze pan. Simmer 10 minutes or until port has reduced by half....
