Full of all the flavours of a taco including vegetables, meat, cheese and beans; sprinkled with chips and tossed in a smoky Catalina dressing, this Taco Salad with Smoky Catalina Dressing makes for an amazing dinner.

For the Dressing:
½ yellow onion, chopped
½ cup canned fire-roasted tomatoes
¼ cup red wine vinegar
¼ cup honey
1 tbsp. Worcestershire sauce
1 tsp. smoked paprika
1 tsp. kosher salt
1 tsp. ground black pepper
1 cup extra virgin olive oil

For the Salad:
1 lb ground beef
1 tbsp of taco seasoning
½ onion, chopped
2 cloves of garlic, minced
1 can of black beans, drained and rinsed
Crushed tortilla chips
Cheese
Iceberg or butter lettuce
Veggies of your choice: I like tomatoes, chopped peppers, corn and green onions
