Taco Stuffed Peppers Recipe

I have never tried stuffed peppers and to be honest, never wanted to. Haha! I thought if they had all of the flavor of tacos, that I might be able to do it. I threw these together in a few minutes to make a healthy, delicious dinner that my whole family loved!

4 red bell peppers
1 pound lean ground beef (can be substituted with ground turkey)
½ cup cooked rice
10 ounces RoTel Diced Tomatoes and Green Chiles, drained
1.25 ounces low sodium taco seasoning packet
1 cup shredded cheddar cheese
