This easy recipe for Cheesy Cauliflower Muffins is so good. You may want to make extra and freeze the leftovers.
Cheesy Cauliflower Muffins Ingredients:
2 pieces medium jalapeno peppers
2½ cups cauliflower rice
6 slices thick-cut bacon ( cooked crispy and crumbled, divided )
1¼ cup cheddar cheese ( shredded and divided )
½ teaspoon garlic powder
to taste sea salt
to taste black pepper
5 pieces large eggs
1/3 c. water

Cauliflower rice is a way to make your cauliflower shine. It lets the subtle sweet and nutty flavors stand out.
1 head of cauliflower, about 1-1/2 lbs
2 Tbsp extra-virgin olive oil
1 leek, finely chopped - about 1/2 c
1/4 tsp each of salt and pepper, more to taste
