Vanilla Wafer Crust:
1 11-ounce box vanilla wafers
1/4 cup granulated sugar
8 tablespoons butter ( 1 stick )
Cheesecake Filling:
3 packages brick cream cheese ( 8-oz each )
3/4 cup granulated sugar
Pinch of salt
2 teaspoons vanilla extract
2 teaspoons lemon juice
Lemon zest
3 large eggs
Toppings for Easter Cheesecake Bites:
1 1/3 cups sweetened coconut ( shredded )
60 mini Cadbury eggs
1 11-ounce box vanilla wafers
1/4 cup granulated sugar
