Loaded Macaroni Salad Recipe

This macaroni salad recipe is loaded with goodness. The perfectly creamy dressing over lots of flavors and textures. It is truly a LOADED macaroni salad!

1 lb elbow macaroni
1 c mayonnaise
1/2 c plain Greek yogurt
1 tsp Dijon mustard
1 Tbsp apple cider vinegar
1 pint cherry tomatoes ( chopped )
2/3 c black and green olives ( chopped )
6 slices thick-cut bacon ( cooked crispy then crumbled )
6 oz feta cheese ( crumbled )
1-1/2 c cucumber ( chopped )
1 c red bell pepper ( chopped )
2 hard boiled eggs ( chopped )
1 whole avocado ( chopped )
1/2 c scallions ( chopped )
20 large leaves of basil ( torn into small pieces )
Salt and pepper to taste
10-12 servings

The grilled vegetables and couscous is tossed in a homemade vinaigrette dressing for a salad that is packed with flavor. This salad is made with couscous, grilled zucchini, square, asparagus, goat cheese and drizzled in a homemade vinaigrette dressing!

Salad:
2 cups couscous ( cooked )
1 zucchini
1 yellow squash
1 lb asparagus
1 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 cup crumbled goat cheese
Vinaigrette:
3 tbsp red wine vinegar
2 tbsp chopped shallots
1 tsp dried thyme
1 1/2 tsp Dijon mustard
1 tsp honey
1/2 tsp pepper
1/4 tsp salt
2 cloves garlic
1/4 cup olive oil
