This zesty salad recipe can be served as a early course in a multi-course meal or as an entreé. This recipe doesn't include other aromatics besides onions and fennel. But, you can include others as you like. Thyme or parsley would be very nice additions.
3 tbsp lemon juice
1/4 cup olive oil
sea salt and freshly ground black pepper to taste
3 celery stalks
1/2 cup walnuts
1/2 cup Parmesan
2 large Fennel
2 large Granny Smith Apples
1 small red onion sliced

My very first Dutch oven experience was with my brother-in-law Dean Hatch at the Festival of the American West in Logan, Utah. Dean needed an assistant and I was fortunate enough to join him. This is his grandmother’s recipe and it was good enough for us to place in the desert competition. My family loves this treat from heaven and when you top it off with a little ice cream there is really nothing like it.
8 Med apples ( peeled and cored I love Granny Smith )
3/4 Cup Sugar
2 tsp. Cinnamon
8 T Butter
Pastry:
4 Cups Flour
1 1/2 tsp. Salt
1 1/3 Cup Shortening
1 Egg ( beaten )
1 T Vinegar
8 T Cold Water
Syrup:
2 Cups Water
1 Cup Sugar
1/2 Cup Butter
1/2 Cup Red Hot Candies
3/4 Cup Sugar
2 tsp. Cinnamon

This Apple Crisp Ice Cream is phenomenal, flavorful, creamy, cool and now one of my most favorite desserts!
Apple Crisp:
2 c. thinly sliced apples ( peeled I used a combo of Granny Smith and Gala )

Topping:
2 Tbsp. flour
4 Tbsp. butter

Mini apple pies with a caramel apple filling.
1 Granny Smith apple ( peeled and cut into 8 wedges )
1 Tbls lemon juice
1 Tbls granulated sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
dash of allspice
1/2 cup caramel bits
1 tsp milk
1 refrigerated pie crust ( I used Pillsbury )
1 egg ( lightly beaten )
sugar to sprinkle on top
1 Tbls lemon juice
1 Tbls granulated sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
dash of allspice
1/2 cup caramel bits
1 tsp milk
1 refrigerated pie crust ( I used Pillsbury )

Line cookie sheet with parchment paper.
