Light, crunchy and packed with Thai flavors, this salad is great for make-ahead lunches. The Thai peanut dressing is lightened up with powdered peanut butter but is still full of flavor. (gluten free, dairy free)

1 cup cooked chicken ( shredded )
4 cups shredded cabbage
1 cup shredded carrots
1 cup diced cucumber
1/3 cup fresh mint
1/3 cup fresh thai basil
1 tbsp chopped peanuts
2 tbsp peanut butter powder
2 tbsp water
1 tbsp sesame oil
1 tbsp rice vinegar
1/4 tsp ginger

  1. Toss all salad ingredients in a large bowl.
  2. Put all dressing ingredients into a jar and shake really well. It takes a little work to get that peanut butter powder all mixed in.
