Cheesy Baked Oyster and Spinach

Baked oysters are usually served as an appetizer for wine tasting menus since they are light, have a distinctive taste and party vibe. Oysters have a deliciously briny and flavorful meat and are considered a delicacy around the world.

16 fresh oysters
5 oz ricotta cheese
1/4 cup grated Monterey jack cheese
1/4 cup grated cheddar
1 tsp smoked paprika
4 oz bacon
1 oz chopped spinach
2 tsp garlic powder
1/4 cup grated Parmesan cheese

During one of our neighborhood get-togethers, Dave Cisneros came up with a great side-dish. It Is hard to go wrong with lots of cheese, green chilies and eggs. It is wonderful with chicken, rice dishes and great with a bowl of chips. I hope you enjoy it as much as we do.

½ lb. cheddar cheese ( grated )
½ lb. Monterrey Jack Cheese ( grated )

1 loaf fresh French bread from the bakery section of the grocery store
•2 jalapeños, seeds and membranes removed and sliced
•8 pieces bacon, cooked and crumbled
