Grilled Vegetables

Grilling vegetables is not about having special equipment. The best vegetables to grill are the ones that are ripe in your garden or fresh at the market.

2 bell peppers ( remove core and seeds, quarter )
1 large red onion ( peel and quarter )
1 medium eggplant ( cut lengthwise in half-inch slices or rounds )
1 medium zucchini ( cut lengthwise in half-inch slices or rounds )
1/2 lb asparagus ( cut off woody ends )
2 medium tomatoes ( cut in half, or a bunch of grape tomatoes, leave whole )
2 large portobello mushrooms ( I like them whole )
1/2 c olive oil ( or more )
Juice from a half lemon or lime
Generous pinch of sea salt and freshly cracked pepper

Crisphy phyllo dough is the wrapper for this vegetable version of the popular dish. Portobello Wellingtons are hearty enough for te most devout carnivores in your life.   How is it that Potbelly is in the spell check but portobello isn't?  Really?  Sometimes I am just baffled by spell check.  Here and with Word.  Sometimes I just have to shake my head at it.   It's just been one of those weeks, ya know?  *disclaimer has been drinking*  It was a drink my dinner day.  I was one email and one spreadsheet away from crawling under my desk and crying.

This Shrimp Boil recipe involves very little boiling, but is a super easy sheet pan version. So easy to perfect! Looks and tastes fantastic every time.

1 lb raw shrimp, peeled and deveined
1 lb fully-cooked smoked sausage
3/4 lb small potatoes, or larger ones cut in wedges
2 ears of corn, cut into 2-inch pieces
10 oz pack whole portobello mushrooms, with larger ones cut in half
4 cloves garlic, smashed and chopped
1 jalapeno, deseeded and chopped
1 lemon, cut in wedges
1/4 c Old Bay seasoning
1/4 c butter
2 Tbsp parsley, chopped
