Most people use the oyster sauce for the seasoning but in this recipe, soy sauce and dry white wine are being used for a lighter flavor notes. The freshness of fresno chili gives the dish some heat and color. You can use a thumb-sized ginger and cut it into strips to add heat and some gingery notes instead of using chilies. Adding some vegetables will be a great addition to a nutrient-packed meal. This stir-fried seafood recipe is perfect with white wine as an accompaniment drink.

8 oz Fennel
14 oz Seafood Mix
1 oz shallots
2 tbsp vegetable oil
1 freshno chili
2 cloves garlic
1 tbsp dark soy sauce
1 tbsp dry white wine
3 tbsp grapefruit juice
Salt and pepper to taste
1 tbsp toasted sesame seeds

  2. Sauté chopped shallots and fennel until fragrant around 2 minutes.

Steamed Clams in White Wine

A steamy bowl of clams is very centering. It's also a very hands-on dish, where you tear the clams out of the shells. I also like crusty bread to dip into the dish.

Our version of the dish is a bit spicy. You can omit the red pepper flakes if you don't feel like putting some heat in the dish. You may also add some ginger for a more aromatic flavor to the dish. Also, you can twist this dish by toasting the garlic to make it crispy and add it at the end as a garnish.

2 tbsp Olive Oil
1 medium-sized shallot
3 cloves Garlic
1 tsp red pepper flakes
1 cup White wine
2 lbs littleneck clams
1 lemon
Spring onions for garnish
Salt and pepper to taste
4
  1. Start by mincing the garlic and onions.
  2. Clean and scrub the clams.
  3. Heat oil in a pan. Add the minced shallots and cook for 2 minutes.
  4. Add red pepper flakes and the garlic...

Spicy deviled eggs

When appetizers are a little salty, like these deviled eggs, they are especially good with a refreshing sparkling wine. The creaminess and fattiness of the yolk is great with bubbly.

You can omit the hot sauce if you don't want them spicy. But spicy food also goes well with champagne.

If you're looking for additional mix-ins, try fresh dill or shiso (Japanese mint).

3/4 cup white wine
3/4 cup chives
1/4 cup scallions
6 large eggs
(2 tbsp) hot sauce
1/4 cup mayonnaise
1 tsp cumin
1/4 cup scallions
1 tsp smoked paprika
6
  1. Fill a large pot with cold water to cover the eggs
  2. Bring water to boil for 1 minute and let stand and cool for 10 minutes.
  3. Heat scallions, wine, and cumin to boiling. Reduce until...

Seafood Salad with crab and lobster

If you're looking for a light dish to serve at a party, this is a good one. This would also be great at a summer garden party.

The recipe as written calls for Rosemary and Thyme, but you can substitute other herbs that you like better. Parsley and dill would also be nice in this dish.

3/4 cup orange juice concentrate
1/4 cup white wine vinegar
(1 tbsp) mayonnaise
1/4 cup olive oil
1 sprig fresh thyme
1 sprig fresh rosemary
salt and pepper to taste
1 cup lobster
8 oz small shrimp
12 oz lump crabmeat
1 large grapefruit
1 mango
1 avocado
(1/2 piece) fresh pineapple
2 tomatoes
18 lettuce leaves
1 lime
6
  1. Chop the fresh herbs very finely.
  2. Mix the orange juice, olive oil, vinegar, water, herbs and salt and pepper together. Refrigerate until ready to use.

Savory Littleneck Clams in Wine

Clams and wines are classic go-to partners. This flavor combination is well-balanced. That is why most of the clam recipes always take advantage of wine as a pairing, not just a drink, but also as one of the main components in the dish.

For additional flavor notes, you can add a stalk of lemongrass or a bunch of dill. You can also add some vegetables such as corn or potatoes to add body to the dish. A bit of cream and saffron would also be wonderful in this dish.

24 oz clams
1 cup basil leaves
5 tablespoons butter
2 cloves garlic
1 cup dry white wine
1 tbsp lemon juice
1 lemon
1 cup vegetable stock
Salt and pepper to taste
4
  1. Using a blender, blend the basil and vegetable stock until smooth.
  2. In a large skillet, melt 2 tablespoons of butter and sauté minced garlic until fragrant.
  3. Add wine and lemon...
