1 lb. boneless, skinless chicken breasts ( cut into strips )
1 tbsp vegetable oil
2-3 garlic cloves ( finely chopped or minced )
1 red chili chopped
to taste knob of fresh ginger ( finely chopped )
1/3 cup cashew
2 red bell pepper ( seeded and sliced into thin strips )
2 cups mange tout or sugar snap peas
to taste green onion ( thinly sliced to garnish )
1/4 cup reduced-sodium soy sauce
2 tsp cornstarch or gluten-free flour
1 cup broth
1 tbsp vegetable oil
2-3 garlic cloves ( finely chopped or minced )
