1 tbsp Thai red curry paste
1 tsp fresh grated ginger
2 cups vegetable broth
1 14-ounce can coconut milk
1 tsp salt
1/2 pound mushrooms, thinly sliced
2 cups green beans, halved
2 carrots, cut into matchsticks
14 ounces extra-firm tofu, drained, patted dry, & cut into cubes
2 tbsp olive oil
2 tbsp fresh lime juice
1/4 cup fresh basil leaves torn
crushed red pepper, to serve
