Thai Red Curry Tuna

Main Ingredients
400 grams fresh tuna
2 tsp sweet chilli sauce
2 tsp soya sauce
1/2 grated ginger
1 tsp sesame oil
For the sauce
400 ml coconut milk
2 tsp tamarind paste
1.5 tsp red curry paste
2 limes, juice only
3 tbsp fish sauce
1 tsp palm sugar, chopped
2 sticks lemon grass, bruised
5 spring onions, sliced
1 handful coriander, chopped
1 handful basil, chopped
1/2 ginger pieces, chopped
5 baby aubergines, halved and grilled
100 green beans, blanched
1 cup pad thai noodles, soaked in water
1 handful cashew nuts
First up, make a marinade by combining the sweet chilli sauce, soya sauce, ginnger and sesame oil. Marinate the tuna for as long as you can (about 30 minutes) then sear it on a hot fire for a minute on each side. Remove and cut into thick slices. Combine the ingredients for the sauce (except the herbs) in a pot and reduce over moderate coals until thick. Strain the sauce and return it to the pot, then add the vegetables, noodles and fresh herbs, simmering for about a minute. Pour the noodles into a bowl and top with the slices of tuna. Garnish with fresh coriander, basil leaves and toasted cashew nuts.
