I had been itching to bake a cake, but didn’t know what kind. Then I remembered the beyond-delicious chocolate cake with peanut butter frosting my best friend and I used to buy by the slice at our hometown’s farmer’s market. It was baked by an old-order Mennonite woman and we’d nearly sprint to get to her stand as quickly as possible (those slices sold out fast!). 2 c. sugar
1-3/4 c. all-purpose flour
3/4 c. Hershey’s unsweetened cocoa
1-1/2 tsp. baking soda
1-1/2 tsp. baking powder
3/4 tsp. salt
2 eggs (room temperature)
1 c. milk
1/2 c. olive oil
2 tsp. vanilla
1 c. prepared espresso (boiling if possible)
For the frosting:
1/2 c. butter, softened
1 c. creamy peanut butter
4-5 tbsp. milk, or as needed
2 c. confectioners' sugar
