The Best Eggnog Pancakes

Eggnog Pancakes originated at my house a few winters ago, when pancakes were on the breakfast menu one morning but there wasn’t enough milk. Eggnog turned out to be a wonderful substitute to save the meal … and another great opportunity for me to use my all-time favorite spice, nutmeg.

2 eggs
1-1/2 c. eggnog
1/2 c. milk
1/4 cup oil
1-3/4 c. all-purpose flour
2 tbsp. sugar
4 tsp. baking powder
1 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. cinnamon
