Full of good-for-you beans, veggies, and pasta, this hearty Minestrone Soup will warm your insides and will keep you cozy on a cool autumn evening!

2 Tbsp olive oil
1 small onion, chopped
¼ cup zucchini, chopped
½ cup cut green beans
¼ cup celery, minced
2 cloves garlic, minced
4 cups vegetable broth
1 (15 oz) can red kidney beans, drained
1 (15 oz) can small white beans, drained
1 (15 oz) can fire-roasted diced tomatoes
½ cup chopped carrots
2 Tbsp fresh parsley, minced
1 tsp. dried oregano
1 tsp. salt
½ tsp. black pepper
½ tsp. dried basil
¼ tsp. dried thyme
1½ cups hot water
3 cups fresh baby spinach
? cup small pasta (mini shells, mini wagon wheels, ditalini, etc.)
