The Best Poblano White Bean Chili

Poblano peppers are what make this chili shine, so much flavor! This recipe is also very versitile, have left over chicken or pork throw it in and it tastes even better!

1 T Bacon Grease
1 Med Onion chopped
2 Poblano Peppers seeds and stem removed and chopped
4 Garlic Cloves Minced
1 tsp salt
1/8 tsp cayenne pepper (optional)
Couple dashes of Hot Sauce
2 Med Potatoes Russet or Yukon diced into smal 1/2in pieces
4 Cups Chicken Stock
1 -15oz Can of White Beans drained and rinsed
1/2-1 Lb Cooked Chicken or Pork cubed into bite size pieces (optional)
1/2 Cup Shredded Cheddar Cheese plus additional for garnish
Sauté onion in bacon grease until softened. Add poblano, garlic, Cayenne pepper, Salt and Hot Sauce and sauté on Med heat for 5-7minutes. Add chicken stock and potatoes and bring to a boil. Reduce heat and simmer about 20 minutes until potatoes are tender. Puree with emersion blender (or food processor) Add in White Beans, Chicken or Pork and 1/2 Shredded Cheddar Cheese. Stir in sour cream. Cook on med - low heat for about another 10 mins .
