The Mama's Girls Pumpkin Cookies with Caramel Icing

This is a great, festive, fall dessert that will have every partaker of these cookies wanting more and begging for the recipe. Pumpkin and caramel should have gotten married a long time ago. They are absolutely perfect together!

1 c. sugar

1 c. shortening

1 eggs

1/2 29 oz. can pumpkin

1 tsp. vanilla

2 c. flour

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1 tsp. cinnamon

Caramel Icing

6 Tbs. butter

1/2 c. brown sugar

1/2 c. milk

1/2 - 1 tsp. vanilla

2-3 c. powdered sugar

Cream shortening and sugar together, but do not whip. Add remaining ingredients. Mix well. Drop large rounded tablespoonful onto greased cookie sheet. Bake at 350° for 14-18 minutes. Allow to cool. ...
