The Perfect Soft and Chewy Chocolate Chip Cookie

After a year and a half of recipe testing, I have finally developed the recipe for the best chocolate chip cookie I’ve ever had! They are perfectly soft and chewy.

¾ cup unsalted butter, soft
¼ cup (48 grams) shortening
1 cup (180 grams) brown sugar
½ cup (125 grams) sugar
1 large egg + 1 egg yolk
2 teaspoons vanilla extract
2½ cups (355 grams) all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (12 ounces) semi-sweet chocolate chips
