The Shipp’s Oatmeal Cookies

When I was in high school we used to eat a lot of our lunches at the Shipp’s home, the home of one of my closest friends. My friend’s mom would make the yummiest food for us but it was always a special treat when we would get these cookies. They were kind enough to share the recipe with me and it is now a favorite in our family. My husband makes these all the time!
3/4 c. shortening
1 1/4 c. firmly packed brown sugar
1 egg
1 1/2 tsp. vanilla
1/3 c. milk
BEAT UNTIL CREAMED THEN ADD:
3 cups quick oats
1 cup flour
1/2 tsp. baking soda
1 tsp. salt
1/4 tsp. cinnamon
1 1/4 c. firmly packed brown sugar
1 egg
1 1/2 tsp. vanilla
1/3 c. milk
BEAT UNTIL CREAMED THEN ADD:
3 cups quick oats
1 cup flour
1/2 tsp. baking soda
1 tsp. salt
1/4 tsp. cinnamon
