Chewy chocolate cookies filled with peanut butter cups

1 cup of flour
1 cup of cocoa powder
1/2 tsp baking soda
1/2 tsp salt
12 tbsp (1 1/2 sticks) of softened butter
2 cups of sugar
1 egg
2 tsp vanilla
1 1/4 cup of mini (or chopped large) peanut butter cups
