Thick and Creamy Potato and Ham Soup

Delicious thick and creamy soup that will warm you up on a cold winter night! Taste great with or without ham.

2 1/2-3 cups onion, small diced (I know it sounds like a lot of onion, but do it anyway)
5 lbs russet or white potatoes, peeled and cut into half inch cubes
1/2 cup butter
2 cups shredded mild cheddar cheese
2 cups diced ham, (make sure it is precooked ham, I usually use leftover ham)
Salt and pepper
Milk (optional)
In a large soup pot saute the onion in the butter until soft Add in cubed potatoes and fill pot with water until potatoes are just covered Add about 1 1/2 - 2 tsp salt and 1/4 tsp pepper Bring pot to boil...
